October Meal Plan
I hope everyone is having a fun October. It is definitely the season for cozy sweaters, warm blankets, falling leaves, and pumpkin everything! I have been trying to get the last of the vegetables from our garden, canning the last of the apples, and stocking our freezer full. Our cabinets finally ran pretty empty last week so it is time to make a new meal plan and go grocery shopping!
Chicken Zucchini Casserole – I have acquired two HUMONGOUS homegrown zucchini and after making some zucchini muffins I am going to attempt this casserole. Here’s hoping it tastes good!
Baked Steaks and Roasted Corn Couscous – I tried couscous for the first time a few months back during Lent and I really enjoyed it, although it wasn’t Cody’s favorite. I’m hoping a different recipe as a side dish instead of a main course will help win him over!
Biscuits and Gravy – Because it’s the perfect fall comfort food! I need to make some homemade biscuits though because I already went shopping and I forgot to buy biscuits! I have have not made any from scratch in a LONG time so I’m hoping this is a good recipe!
Leftovers – AKA Mom’s Night off!
Cheeseburger Soup – If you haven’t tried this soup yet, you are MISSING OUT! Seriously. Add it to your meal plan NOW!
Spaghetti and Meatballs – I decided to add meatballs to the spaghetti this week instead of regular ground hamburger. Let’s make life a little fun and sing On Top Of Old Smokey too!
Frozen Pizza – Because by the end of the week, I am done! 🙂
