A Week’s Worth of Fall Meals

Happy Sunday! I hope your week has started off well! Mine has been very productive with getting the house clean this weekend along with canning apple butter, drying cherry tomatoes, and everything else that I do on the weekends.

I am trying to get as much food out of our garden as possible before it freezes, and it is a challenge figuring out what to do with it all sometimes! Last week I puréed a pumpkin and froze it, so if you have some great pumpkin cookie, muffin or pie recipes, share them my way!

Anyways, hopefully you’ll be seeing all sorts of recipes using vegetables pop up in my meal plans over this winter! (As long as everything goes smoothly!) But let’s get to this week’s meals!

Weekly Meal Plan: 
White Chicken Chili
Pork Loaf and Mashed Potatoes
French Dip and Swiss 
SANDWICHES
Cheesy Broccoli and Rice
Meatballs and 
Hashbrowns
Vegetable Beef Soup
Chicken Bites and Rice

White Chicken Chili – It finally cooled off today and I am going to say it’s officially soup weather! This is a favorite of ours and I swap out one of the cans of chilis for the banana peppers we have from our garden.

Pork Loaf and Mashed Potatoes – I canned my first apple butter today and guess what this recipe calls for?! In the past I have always substituted applesauce, but I am very interested to see if I can tell the difference!

French Dip and Swiss Sandwiches – After we finish this meal I will save any left over au jus in the freezer to make the vegetable soup later in the week!

Cheesy Chicken Broccoli and Rice – Sometimes a quick and easy comfort meal is just needed! This recipe actually doesn’t have chicken in it, so I will add some cooked chicken to it before baking.

Meatballs and Hashbrowns – I make my own meatballs and for the has browns I grate raw potatoes into some hot oil in a frying pan and they come out quite delicious.

Vegetable Beef Soup – I don’t stick to a specific recipe for this so it turns out different about every time. I use the left over meat and au jus from the roast earlier in the week. Tomato juice and whatever vegetables I have lying around are added to the crockpot as well and a few hours later we have an easy supper!

Chicken Bites and Rice – Weekends are easier when I plan easy meals. We have some really yummy Best Choice popcorn chicken I throw in the deep fat fryer and I will probably make a preflavored rice packet as a side. Else we will have soup leftovers from the day before!
