Chicken and Vegetable Gravy Over Biscuits

Here’s a new take on biscuits and gravy. I love making homemade biscuits from Sugar Spun Run, and I can top them with about anything! This is a quick and easy chicken gravy that the whole family enjoys. It is also a great way to sneak in some vegetables!

Chicken and Vegetable Gravy over Biscuits

Ingredients
  

  • 1 or 2 chicken breasts or thighs
  • 1 15oz can mixed vegetables
  • cup chopped onion
  • 5 tbsp butter
  • 2 cups chicken broth
  • ¼ cup flour
  • biscuits
  • salt and pepper, garlic powder

Instructions
 

  • Melt 2 tbsp butter in a deep frying pan
  • Dice chicken and fry until almost cooked through.
  • Add chopped onion and fry until chicken is cooked through.
  • Season with salt, pepper, and garlic powder.
  • Scrape everything to the side of pan.
  • Melt remaining 3 tbsp butter in pan.
  • Whisk in flour and cook until golden about 2 minutes. ,
  • Add 2 cups chicken broth and mix entire pan together. Stir continuously until thickened.
  • Drain can of mixed vegetables and add to pan. Heat until warm and bubbly.
  • Serve over biscuits.
