End of January Weekly Meals

Thank goodness it is the end of January! I know time flies, but for some reason, it seems to stretch on and on and on through January. The end just means we are that much closer to spring! I know we need to appreciate each season, but this is one I have a harder time enjoying. What’s your favorite season? Leave me a comment below!

Leftover Roast Beef Stroganoff – I have a roast in the freezer that is already cooked up. This is one of my favorite ways to use it!

Roast Beef Stroganoff

Course Main Course
Servings 4 people

Ingredients
  

  • 2 cups cooked roast beef
  • 1 can cream of mushroom soup
  • 1 6oz can mushrooms
  • 2 tbsp ketchup
  • 1 tbsp Worchestershire sauce
  • 1/2 tsp garlich powder
  • 1/4 tsp chili powder
  • 3/4 cup sour cream

Instructions
 

  • Cut roast beef up into strips.
  • Heat beef in a large frying pan. (Add a little butter or oil if desired.) I have also added onion at this point too.
  • Pour the mustroom soup and mushrooms over beef. Continue to heat.
  • Add in ketchup, Worchestershire sauce, garlic powder and chili powder. Stir well.
  • When heated through and ready to serve, gently stir in sour cream.
  • Serve over mashed potatoes or wide egg noodles.

Omelettes – I make 2 egg omelettes for Cody and myself while the kids only get one. Its a great way to use up items in the fridge and have a quick meal! The key to a good omelette is a good nonstick pan!

Orange Chicken Over Rice – As many times has I have had this in my meal plan lately, we haven’t had it yet! Maybe this week it will actually work out. I use the sauce from the recipe linked here, but I have used multiple kinds of barbecue sauce, even my own homemade kind. I also am using baked popcorn chicken from the freezer.

Creamy Bacon Chicken – This is the new recipe that I am trying out this week! I am excited because who doesn’t love bacon and chicken?!

Lasagna – I use no boil noodles to speed up the prep process here! I also use the recipe right off the noodle box. Have you tried using no boil noodles?

Chili and Cinnamon Rolls – Apparently it is a midwestern thing to eat chili and cinnamon rolls in the same meal. But if it is wrong, I don’t want to be right! I haven’t made homemade cinnamon rolls in months, and I hope I can find the time to whip these up as the title of the recipe isn’t lying. They are the best homemade cinnamon rolls ever!

Spaghetti and Texas toast – I promise we don’t eat this every week, its also just another meal I’ve been skipping over when we have leftovers to eat. Can’t go wrong with an easy favorite!
