Weekly Meal Plan Recipes April 7 – 13

Yay! I think it is safe to say that spring is finally here! And while this week’s meal plan probably doesn’t have what you would typically call “spring” foods, it does contain hamburgers that are going to be grilled outside so that counts right?! Either way, I plan to celebrate our finally good weather by getting our family outside as much as possible.

Breakfast for Dinner – I don’t cook a lot in the mornings, so if we want to enjoy some pancakes, we will have them at night! I don’t use pancake mix, but here is a recipe that works well for me.

Lasagna – I have adapted a recipe I got off of a noodle box and I go for the no-boil noodles; it makes life so much easier! This is one of those recipes I put into small square pans so I can freeze one for later.

Lasagna Recipe
16 oz No-Boil Lasagna Noodles
12 oz Cottage Cheese
2 c Shredded Mozzarella Cheese
¼ cup Parmesan Cheese
1 beaten egg
1/4 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Salt
1 jar (26 oz) spaghetti sauce
1 lb ground hamburger
Brown hamburger and drain off excess fat. Add spaghetti sauce and simmer. Meanwhile, mix together cottage cheese, 1 1/2 cups mozzarella cheese, parmesan and the beaten egg. Season with salt, pepper, and garlic salt. 

Layering Lasagna in 2 8x8 pans:
Place one layer of noodles. (Will need to break noodles to get them to fit.) Top with 1 - 2 scoops of meat sauce, then cottage cheese mixture. Repeat the process. Top with another layer of noodles and the last of the meat sauce. Spread the top with remaining mozzarella cheese. Cover with foil. Freeze one and bake the other at 350 for 40 minutes. Uncover and bake 10 more minutes. Let rest before serving. To bake frozen lasagna, let thaw in fridge for 12-18 hours. Bake the same or until internal temperature is 160˚F.

1 Pan Chicken Bake – Simple, easy and done in an hour with almost NO prep work!

1 Pan Chicken Bake Recipe
2 boneless chicken breasts, halved OR 6 boneless chicken tenders
1 1/2 c cubed potatoes of choice
1 1/2 c vegetable of choice 
     (broccoli, corn on the cob, green
          beans, carrots, etc.)
1/2 c butter
Garlic Powder
Onion Salt
Thyme, Parsley, Pepper, Salt
Place chicken in the middle of a 8x8in baking dish. Place potatoes on one side and vegetable on the other. Shake seasonings over contents. Mix in if desired. Slice butter and place all over on top of ingredients. Cover with aluminum foil and bake 1 hour at 350˚ or until thermometer inserted into chicken reads 160˚.

BBQ Chicken Pizza – Not your typical pizza, but if you want to try something with different flavor its good! Perfect for heading into spring!

Grilled Mac and Cheese – Need a carb overload?? This is the ultimate comfort food and perfect for Friday in Lent. You’ll be enjoying cheesy goodness too much to miss meat!

Grilled Mac and Cheese Recipe
Sliced bread of choice
1 box Mac and cheese
American Cheese Slices
Butter
Cook the mac and cheese according to box instructions. Do not add all the required milk so noodles are stickier. (This is also a great way to use leftover Mac and cheese!) Heat a skillet on the stove. Butter two slices of bread. Place one slice, butter side down on the pan. Top with a slice of cheese and Mac and cheese. If Mac and cheese is leftover, top with a second slice of cheese. Place final slice of bread butter side up. Cook until golden brown and flip. Cook the other side. Serve warm.

Hamburgers and Potato Chips – Time to use the grill! We make our own hamburger patties. I thaw 1 pound hamburger and mix it with an egg and minced onion. Shape into 4 patties and throw them on the grill. Get outside and enjoy the nice weather!
