Warm Meals for a Cold Week: Meal Planning

This week’s meal plan is all about the warm comfort food! It has been so cold here with ice and more ice; I am looking forward to Tuesday when it will be 32˚F and not 11˚! Which, really isn’t all that warm I guess when you think about it!

So, we are having soup twice this week because it’s the ultimate winter food… and I have it in my freezer already so I don’t have to cook anything. 🙂 If you haven’t tried freezing soup, I highly suggest it! You can’t go wrong. I just let it thaw in the fridge the day before and then I put it in a pot on the stove to heat it up the next day! If you are making either of these two soup recipes this week, I highly suggest freezing your leftovers, or making a double batch to make sure you have leftovers! (I don’t have to double them yet with our small kids.)

So, without further ado, here are this week’s meals!

Weekly Meal Planning

This Week’s Recipes:

Taco Soup – a super easy dump and go soup! It can be made on the stove or in a crockpot.

Ribs and Cheesy Potatoes – So this is another leftovers meal from the freezer because it’s a busy night. However, if you have never had cheesy potatoes, you are MISSING OUT!

Chicken, Bacon, Cheesy Pasta – This site calls this recipe Crazy Good Casserole, and they aren’t lying! It’s like Mac and Cheese on crack. The ultimate comfort food!

Potato Soup – Here’s the second soup for the week! The perfect way to use that leftover ham still frozen from Christmas.

Biscuits and Gravy – My husband loves this meal, but when I switched to making homemade biscuits, this meal became 10 times better. These homemade biscuits are really not that difficult and didn’t take much more time than popping open the can from the grocery store. I will never go back to store bought!

Spaghetti and Garlic Bread – Nothing special here, just from the jar and the Texas toast box!

Beef and Broccoli over Rice – This recipe is a crockpot meal, which is great for Sunday’s when I don’t want to do anything by the end of the day and I just want to relax!

Meal Prep Sunday

Well, that’s about it. I know last week I did a bunch of meal prep on Sunday. It really helped the week go smoothly, but with so many meals out of the freezer this week, I decided I didn’t need to prep. We also didn’t make it to the grocery store until 5:00pm Sunday night, so that didn’t leave a lot of time for prep! It is something I will do again though when I have time and a busy week ahead!
