Memorial Week Meal Plan

I hope you are enjoying your holiday weekend! We are having a relaxing weekend with family and just trying to stay dry and safe with all the crazy weather that is happening around us. The worst part of this last whole week? I can’t find my umbrella anywhere!

But I’m getting off topic… I am starting my first full week off work from school and starting back at the farm. If there is one thing I’ve learned in the past about farm work, it does NOT have regular hours. Chances are, I will rarely be home at the same time every night. Therefore, meal planning will be my consistency this summer! Nights will also probably get switched right and left depending on how much time I have to prepare and cook meals.

Some of these recipes are new this Memorial Week from other blogs, some are new from being made up in my head, and some are oldies that I don’t have recipes for because I throw whatever I have into the pot! 😀

Recipe Instructions:

Fish Tacos – This is one of those recipes I am going to make up as I go. Maybe I will be able to share it with you in the future.

Omelettes – Throw whatever you have that sounds good on top of 2 eggs.

Enchiladas – These are a creamy variety that our family enjoys. The more cheese, the better!

8oz softened cream cheese
2 tsp onion powder
2 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1 lb browned ground hamburger
6 flour tortillas
1 small can diced green chilis
1/2 can cream of mushroom soup
1/2 cup sour cream
1/4 cup mllk
2 cups shredded cheddar cheese
In a large bowl, beat the cream cheese, water, onion powder, cumin, salt, pepper and green chilis. Stir in browned hamburger. Place 2 heaping tablespoons down the center of each tortilla and roll up. Place in 8x11 inch baking dish. 

In an empty bow, combine soup, sour cream and milk. Pour over enchiladas. Baked uncovered at 350ËšF for 20-30 minutes or until heated through. Sprinkle with cheese and bake 10 min longer or until cheese is melted.

Lasagna – This keeps showing back up because I haven’t used the frozen casserole in my freezer yet!

Grilled Hamburgers – I make 4 patties using 1lb hamburger, chopped onion and 1 egg. Grill until desired doneness.

Pork Chops and Roasted Potatoes – We will try grilling again. Hopefully the weather cooperates this week!

Oven-Roasted Chicken – This is completely new and an experiment for me! Left over chicken will be shredded and frozen to use in casseroles and future meals.
