Meal Planning a Crazy Week

Who has a crazy week ahead of them? We do!

Cody is heading out of town at the beginning of week for work. He will be gone 2 nights. Then I am leaving 2 days later for a night for work as well. Chalk that up to a crazy week! To make it even more out of the ordinary, it will be the first time I will be away from Wyatt at night. I hope our sleep training is going to pay off! It is definitely getting better and I am planning on doing a post update soon on the whole process. But anyways.. back to our meals this week!

As you can see, I am planning quite a few leftover nights as it seems silly to cook a full meal when it is just one of us and the kids! On Friday night I will be having cheese pizza on my work trip while Cody and the kids are probably going to be having the frozen variety. Or Cody can use the Casey’s gift certificate we’ve had on the fridge for the last few months!

Cornflake Chicken Casserole – I didn’t get this one made the last time, so I’m still crossing my fingers its a tasty one. We’ll be eating it two nights!

Easy Beef Stroganoff – I am a stroganoff fan and haven’t tried this particular recipe yet. It can be make in the crockpot or on the stove. I really enjoyed the chicken stroganoff from this site so I hope this one is as good!

Orange Chicken – This is a SUPER easy recipe if you are craving a little Chinese flavor in your week. Dice some chicken up, cook about any way you prefer and then cover with sauce made with 1 cup BBQ sauce, 1 cup orange marmalade and 2 TBSP soy sauce. Serve on a bed of white rice. Don’t trust me? Just check out the recipe! I’m going to make it even easier this week by using the popcorn chicken I have in the freezer.

Oh, and if you just can’t find a good BBQ sauce, try this recipe. I could drink the stuff!
