A Week’s Worth Of Meals: Weekly Meal Plan

A new week, a new set of meals! This week it is back to work for me as Spring Break is over. 🙁 On the other hand, that only means 9 more weeks until summer break, right?! 🙂

Weekly Meal Plan for March 17-23
Sunday - Steak Fingers and Roasted Potatoes
Monday - Biscuits and Gravy
Tuesday - Omelettes
Wednesday - Sweet and Sour Meatballs
Thursday - Baked Spaghetti
Friday - Corn and Black Bean Quesadillas
Saturday - Cornflake Chicken Casserole

Sorry I don’t have every recipe for this week. The first three days have recipes that are pretty much all from my head. For steak fingers I use minute steaks and cut them into strips and fry like chicken fried steak. The biscuits come from a can while I just estimate amounts for the gravy. Finally, my omelettes have been perfected since I was in college. Maybe I should do a video on them as they really are fun to make, but do take some steps that I don’t think I could explain on a recipe card.

Crock Pot Sweet and Sour Meatballs – perfect to use up the meatballs I have in my freezer right now. I freeze them after I broil them as we only eat about 1/2 a pound of hamburger at one meal. So, I will only be using this recipe here for the sauce, and it’s a new one for me! See last week’s meal plan for my meatball recipe if you like.

Baked Spaghetti – Not your typical spaghetti… it’s even better!

Corn and Black Bean Quesadillas – oh dear here’s a new recipe that I’m going to wing as I create as well…. It’s going to have a can of corn, a can of black beans, maybe some Rotel, and taco seasoning, all fried between some tortillas. It sounds like it should end well, right?!

Cornflake Chicken Casserole – This is a new recipe I am going to try. Thank you Megan for sharing!
