Chicken and Vegetable Gravy Over Biscuits

Here’s a new take on biscuits and gravy. I love making homemade biscuits from Sugar Spun Run, and I can top them with about anything! This is a quick and easy chicken gravy that the whole family enjoys. It is also a great way to sneak in some vegetables!

Chicken and Vegetable Gravy over Biscuits

Ingredients
  

  • 1 or 2 chicken breasts or thighs
  • 1 15oz can mixed vegetables
  • cup chopped onion
  • 5 tbsp butter
  • 2 cups chicken broth
  • ¼ cup flour
  • biscuits
  • salt and pepper, garlic powder

Method
 

  1. Melt 2 tbsp butter in a deep frying pan
  2. Dice chicken and fry until almost cooked through.
  3. Add chopped onion and fry until chicken is cooked through.
  4. Season with salt, pepper, and garlic powder.
  5. Scrape everything to the side of pan.
  6. Melt remaining 3 tbsp butter in pan.
  7. Whisk in flour and cook until golden about 2 minutes. ,
  8. Add 2 cups chicken broth and mix entire pan together. Stir continuously until thickened.
  9. Drain can of mixed vegetables and add to pan. Heat until warm and bubbly.
  10. Serve over biscuits.
