Chicken and Vegetable Gravy Over Biscuits
Here’s a new take on biscuits and gravy. I love making homemade biscuits from Sugar Spun Run, and I can top them with about anything! This is a quick and easy chicken gravy that the whole family enjoys. It is also a great way to sneak in some vegetables!
Chicken and Vegetable Gravy over Biscuits
Ingredients
- 1 or 2 chicken breasts or thighs
- 1 15oz can mixed vegetables
- ⅓ cup chopped onion
- 5 tbsp butter
- 2 cups chicken broth
- ¼ cup flour
- biscuits
- salt and pepper, garlic powder
Instructions
- Melt 2 tbsp butter in a deep frying pan
- Dice chicken and fry until almost cooked through.
- Add chopped onion and fry until chicken is cooked through.
- Season with salt, pepper, and garlic powder.
- Scrape everything to the side of pan.
- Melt remaining 3 tbsp butter in pan.
- Whisk in flour and cook until golden about 2 minutes. ,
- Add 2 cups chicken broth and mix entire pan together. Stir continuously until thickened.
- Drain can of mixed vegetables and add to pan. Heat until warm and bubbly.
- Serve over biscuits.
