Back to School Meal Plan

It has been a long time since I have created a meal plan post (end of June I think!), but I took a break from meal planning for about half of the summer! With school being back in session, however, I like knowing how our nights are going to run, especially when sometimes we will be at games or school activities.

We are trying some new recipes and some oldies as well! Check them out below!

Grilled Steak Packets – Last time I made these I wanted kebobs, but then we didn’t have any skewers. So I threw all the veggies (whatever ones we had or were on sale) and steak into some aluminum foil and sat them on the grill for 20 minutes. The result was flavorful and juicy! Perfect for a summer night. (And we get to add corn on the cob chunks to this one!)

Baked Pork Tenderloin – I have on of these in the freezer, but have never actually cooked one, so I hope this recipe doesn’t steer me wrong! I will be making mashed potatoes and side salad to go with it.

Eggs and Bacon – Because it’s cheer practice night and Cody won’t be home until late!

Back to School Picnic – Our PTO puts on a delicious back to school picnic for all the school families. My cheer squad also follows with a pep rally, so we can’t miss it! 🙂

Recipe for Tuna Soufflé1 can cream of mushroom soup 1 can tuna, drained and flaked 1 cup cooked rice 4 eggs separated Optional 1/2c pimento 1 Tbsp snipped parsley In a saucepan, heat and stir soup, tuna, rice, pimento and parsley. Heat through. Beat egg whites to stiff peaks; set aside. Beat yolks until thick and lemon colored. Slowly stir yolks into tuna mixture. Then fold in beaten egg whites. Pour into a 2 quart soufflé dish. (I use a 9x9 casserole pan.) Bake at 350 for 30-35 minutes. Goes well served with shredded mozzarella or parmesan cheese on top. Also with a side salad.

Cheesy Sausage Stuffed Banana Peppers – Banana peppers are one thing our garden is producing an abundance of! One of the quickest and yummiest ways to get rid of them is with a recipe like this! (They are also really yummy breaded and fried!)
