Weekly Meal Plan ft. Rachel’s Crafted Life

Happy June! Wow! How am I even saying that already? This year is just flying by! I spent the first week of summer feeding calves, cleaning barns, pouring cement, and getting skid loaders stuck in the mud. (Oh and dodging tornadoes right and left it seems like. Severe weather season can be over already. Thanks.)

But, this weekend we finally get to head outside and enjoy the sunshine! I even put laundry on the clothesline yesterday. Did you know that sun helps bleach stains?! It is a miracle worker on Wyatt’s cloth diapers. No chemicals or pretreating needed!

But there I go, off topic again. Summer has been treating us well, and I am finding myself with even less time to prepare meals. Luckily for me, I stumbled upon a blog called Rachel’s Crafted Life and she has some simple, quick, and easy recipes. I found that I have a lot of the ingredients already so I won’t be making an elaborate grocery list either!

She also features cute crafts and shows some of her amazing thrift shop buys. I think we would end up being friends if we ever got the chance to meet! So, I encourage you to check out her blog. But, here are the recipes I am going to try from her this week:

Grilled Pork Chops and Pineapple – When I saw the grilled pineapple recipe on her blog and that it was supposed to taste like Tucano’s I just had to put it on the meal plan! I’ve only been to Tucano’s once (it’s in Utah) and I will NEVER forget the amazing food I ate there! Hopefully I can replicate it!

Avocado Egg Rolls – Avocado? yum. Egg Rolls? yum. Putting them together has to be delicious. Problem is, my grocery store does not carry egg roll wrappers. I will attempt to make my own with this recipe, but if I get lazy or it fails, I’ll just turn the filling into guacamole and eat with tortilla chips! 🙂

Snap Pea and Chicken Stir Fry – One pan meals are musts this summer because they save time cooking and in dishes! This one sounds yummy, but I doubt I can get any sambal oelek here in our small grocery store, so I read that I can substitute sriracha sauce or I think I might just use some peppers, salt, and vinegar as that’s what sambal oelek really is.

Biscuits and Gravy – Her recipe for gravy is just like mine, but she actually has it written down for you! Enjoy!

Cheesy Chicken Taquitos – A crockpot meal that is sure to be a winner!

Grilled Brats with Peach Cobbler – Anyone who knows me knows I have a sweet tooth. When I saw that peaches are on sale for 99¢ a pound this week, the peach cobbler had to be added to the list!

Salad with Homemade French Bread – We actually are planning on going to a birthday party and baptism on Saturday and we won’t be home until right at suppertime, so this meal can be prepped that morning and we’ll just pull it out when we get home!
