Quick and Easy Sandwiches for Supper
Ugh.. it is HOT! And we haven’t even seen the worst of it yet. The next 5 days are forecasted to reach 100º and the heat index is going to be higher. When the weather gets like this, the cows aren’t fond of eating and neither am I. I am also not fond of cooking! So, the last thing I want to do during this heat is fire up the kitchen and make a heavy meal. Therefore, I am pooling all of my favorite quick and easy sandwich recipes to get us through this heat wave. While some of the recipes do require the oven, it doesn’t require me to stand over it too long, so I’ll include them! Oh, but I didn’t include your typical deli meat sandwiches because I hope those are a given. They are around our house!

Chicken Caesar Sandwich
Layer rotisserie chicken with lettuce, parmesan cheese and Caesar dressing. Toasting your bread is optional.
Chicken Salad – Here’s the pinned recipe I always start with… I might end up adding other ingredients I have laying around my kitchen like dried cranberries or raisins.
Cheeseburger Joes – These have quickly become a favorite, but I like to add a little chopped up pickle and most of the time I just make them in the frying pan instead of a crockpot.
Ham Salad – Perfect to use up that leftover ham I’ve had in the freezer since Easter!
Breaded Chicken Patties
Super easy to pick these up at the grocery story and throw the patties into the oven for 10 minutes. Place on a mayo spread bun and top with lettuce and a slice of cheese!
Bacon Lettuce Tomato – BLT Sandwich – Mine definitely aren’t this fancy, but they are a favorite!
BBQ Roast Beef or BBQ Chicken – Take leftover cooked roast beef or chicken and shredded it. Mix in BBQ sauce of choice. Add to a bun and top with cheese and onion.
Deviled Egg Salad Sandwich – There have been instances where I wanted to make deviled eggs, but the fell apart when peeling them, so I end up making this instead! It is delicious on toast or just with crackers. Perfect for hot summer days!
Hotdogs – Mix them up by adding different toppings. My husband likes sour cream on his hot dogs. Make them chili dogs in the summer with a can of chili, or maybe you have some leftover in the freezer from winter!
Brats & Polish Sausage – Just a more “adult” take on the hot dog… am I right??
Chicken Bacon Ranch Quesadilla
Make quesadillas just like grilled cheese. Butter the tortilla and place butter side down in the frying pan. Add toppings. Here I use cooked shredded chicken (from the can works!), bacon bits, cheddar and mozzarella cheese and sometimes diced onions. Top with another butter tortilla, butter side up. Flip when bottom tortilla is golden and cook the other side. Cut into pizza shaped slices and dip in ranch, sour cream, or salsa!
Grilled Cheese Sandwiches – Because you can’t forget a classic!
Fried Egg Sandwiches – These are one of Mia’s favorites and I love how cheap they are to make. Fry an egg and top with a slice of cheese. Some people like to add tomato too!
Meatball Subs
These are perfect if you have some frozen meatballs. I have a homemade recipe that I love! Heat the meatballs with some marinara sauce, put three meatballs in a hot dog but and top with mozzarella cheese.
Tuna Salad – Easy Peasy – Although I use everything else in this recipe, I can’t say I ever used celery.
PB & J – I have to add this to the list because it’s so simple I forget about it! Make them more fun using the uncrustable maker!
Pizza Bobs
I have no idea why they are called pizza bobs, but that’s what they were on our school lunch menu! And they are so much better made at home! They are grilled cheese filled with pizza sauce and pepperoni as well as 1 slice of American cheese and some mozzarella.
