Birthday Week Meal Plan

Happy Easter! and Happy Birthday Wyatt! This week is an exciting one with Easter and Wyatt’s first birthday all packed into one! While we aren’t having a separate party for Wyatt this year, we are getting together with family for Easter and we will be celebrating with everyone then. How is my baby one already?!

So, meals for this week are oldies but goodies that I know will please the whole family, but be easy to make as well. I want to be able to focus on all the excitement and not be stuck in the kitchen with a lot of prep work or dishes.

Omelettes – Sunday’s meal is still a little up in the air – leftovers or omelettes depending on how hungry we are after two family Easters!

Miniature Pot Pies – I wish I had a recipe to share, but I am winging this one as I go. Stay tuned to my instagram stories to see what I come up with!

Cheeseburger Macaroni – I came up with this one day and it is a quick and easy favorite.

Cheeseburger Macaroni Recipe
1lb ground hamburger
1/2 c chopped onion
1 c uncooked macaroni
1 can cream of 
         mushroom soup
1/8c pickle juice
1/2 c cheddar cheese
Boil the macaroni in water with salt until cooked al dente. Meanwhile, fry the hamburger and onion in a large sauce pan, seasoning to taste. Drain excess grease. Add soup, pickle juice, cheese, and noodles. Heat on stovetop until cheese is melted. Serve immediately. Suggestion: Add freshly chopped tomatoes for garnish.

Spaghetti – Quick and simple, ground hamburger, spaghetti noodles, and canned sauce!

1 Pan Pork Chops with Apples and Onions – This will be the second time we are having this meal meaning it passed the first attempt back in March.

Grilled Brats – Let’s spend some time outside on Friday night!

Chicken Stroganoff – I have attempted this recipe from Lil’ Luna a little over a month ago and it was an instant favorite.
