BBQ Chicken Pizza
Hello! Long time no see! My fault not yours. Turns out having two kids takes three times as much time as just having one! 🙂 But here I am bringing you a recipe for BBQ Chicken Pizza. I made this on Sunday night and Cody and I loved it. Mia… not so much, but then she’s kind of becoming a picky eater.
Best part of this recipe? It really doesn’t take too much to throw together, even with a homemade crust! I was able to manage it with the two kids in the house and Cody out of it. That being said, please realize that I am NOT a food blogger by any means so my pictures aren’t fantastic and my ingredient amounts aren’t exact. When it comes to cooking, I tend to put in whatever amounts look good! So take that in mind and make what you know your family likes!

Prepare the Crust
I make a homemade crust using this recipe. I did cut it in half and it was PLENTY for one pizza. It rose really well (probably because I stuck it in the garage and it was over 90 degrees outside) and tasted delicious. When rolling it out for the pan, I do like to put a mixture of flour and cornmeal on the bottom. The cornmeal adds a little crunch to the crust.
BBQ Sauce
For BBQ sauce go ahead a choose your favorite! I actually used a combination for this recipe: my homemade BBQ sauce as well as KC Masterpiece Original Barbecue Sauce. The homemade kind is a little sweeter and the KC Masterpiece is a little spicier. I just squirted them all over the pizza crust and spread them out with a spoon. Like juicer pizza? Use a little more! Drier pizza your preference? Use a little less!
Homemade BBQ Sauce (My Mom’s Recipe!)
- 2 cups ketchup
- 2 Tbsp mustard
- 1 cup brown sugar
- 1 tsp Worcestershire Sauce
- 1 tsp liquid smoke
- 1/4 cup vinegar
Mix all ingredients in a medium sized sauce pan and boil until smooth and well blended.
Toppings
Chop up about a 1/2 cup of onion, 1 small chicken breast, and 1 or 2 strips of bacon. Fry them in a medium sized pan until chicken and bacon are cooked through and onions are translucent.
Cheeses – you can’t have a pizza without cheese! Dairy makes everything better! After you spread the BBQ sauce on the crust, sprinkle mozzarella cheese lightly on top the sauce. Next comes the chicken, onion, and bacon. Finally, top with more cheese. I covered the toppings with mozzarella and then sprinkled a little Colby and Monterey Jack on the very top. I would say I used about 2 cups of mozzarella and a 1/2 cup of colby/monterey jack, but again I don’t measure. Just put whatever looks good to you on top! Some people like lots of cheese (us!) others, not so much.
Baking
Finally bake it! Follow the instructions that come with the crust. I baked this one at 425 for 13 minutes. Cool, cut and dig in! And remember, if you like this BBQ Chicken Pizza, please pin, share, and tell your friends!
BBQ Chicken Pizza
Ingredients:
- Pizza crust
- BBQ sauce – your preferred kind
- 1 chicken breast
- 1 – 2 slices of bacon
- 1/2 cup chopped onion
- 2 or more cups shredded mozzarella cheese
- 1/2 cup or more shredded Colby and Monterey Jack cheese
Directions:
Prepare your pizza crust using the given directions. Spread crust with BBQ sauce and top with about a quarter of the mozzarella cheese. Cut up chicken breast and bacon into chunks and fry with onion until cooked through and onion is translucent (about 8-10min). Spread on top of pizza. Cover with remaining cheeses and bake according to crust instructions. Cheeses should be melted and turning golden brown.
