April Weekly Menu

Happy Holy Week! Easter is only a week away! We have a relatively easy week ahead of us which will be great to get everything done before the busy weekend ahead! I have work off on Friday and the kids’ daycare is closed, so hopefully we will have a good day hanging out and I plan to finally get some egg dying done! What is your favorite way to dye eggs? I have a few ideas, I just don’t know which one we will attempt yet!

Casey’s Pizza – We are having a lazy Sunday? Can you tell?!

Grilled Hamburgers – We didn’t have these last Saturday like planned and its supposed to be 74˚ on Monday so we are breaking out the grill! We make our hamburger patties with 1 lb ground hamburger, diced onion and 1 egg. Mix it all together and shape 4 patties.

Biscuits and Gravy – You must think we have this a lot, but it’s one of those meals that gets shoved off all the time…. so we haven’t had it yet. This week right?!

One Pot Mexican Beef and Rice – Here’s a new recipe I am going to try. Thanks for sharing, Megan!

Chicken Tetrazzini – This is my mom’s recipe that I changed up a little from how she makes it. If you want some comforting cheesy deliciousness, here’s your recipe!

1/3 c. chicken broth
1 can cream of chicken (or 
       mushroom) soup
8 oz spaghetti noodles
2 small diced chicken breasts
2 tbsp butter
1/2 c. diced onion
1/2 c. chopped green pepper
2 c. shredded cheddar cheese
Cook spaghetti noodles; drain water. Meanwhile, melt butter in a frying pan. Add chicken, onion, and green pepper. Fry until chicken is cooked through and vegetables are tender. Mix with soup, noodles, and 1 cup cheddar cheese. (Add a splash of milk if soup is too thick.) Place in baking dish. Top with remaining cheese. Bake 30 minutes at 350˚, uncovered.

Tuna Patties and Pesto Pasta – It’s the last Friday in Lent and I haven’t made Tuna patties yet! I kind of mix a few recipes together with whatever is in our kitchen at the time. I linked a few recipes if you want to see my inspiration. Also I’m not sure yet if the pesto pasta will be from a packet or if I am going to attempt a homemade version from this recipe.

Family Easter – It’s a jam packed weekend with our first family Easter on Saturday. Since Wyatt’s birthday is 2 days after Easter, we decided to celebrate at the family gatherings. I am planning on bringing cupcakes to share (and to get fun pictures of Wyatt with cake on his face).
