Easy Meatballs

Servings: 24 meatballs

Ingredients
  

  • 1 lb ground beef
  • 1/2 c chopped onion
  • 1 egg
  • 1/4 c tomato juice
  • 6 - 10 saltine crackers
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic salt

Method
 

  1. Line a cookie sheet with alumninum foil. Set oven to broil.
  2. Crumble 6 crackers in a mixing bowl.
  3. Add remaining ingredients.
  4. Mix with your hands or a wooden spoon.
  5. If mixture is too sticky and wet, add remaining crackers as needed.
  6. To make meatloaf at this point, place into a bread loaf pan, cover with ketchup and bake for 45 minutes at 350° or until center reaches 165°.
  7. Form into walnut sized balls and place onto lined cookie sheet.
  8. Broil for 6 minutes. Flip using tongs and broil 6 more minutes.
  9. Remove to a 9x9 casserole dish and top with desired sauce. Bake for 30 minutes at 350˚.
