Caramel Apple Cake

A moist spiced cake filled with apples.

Ingredients
  

Cake
  • 1 ¼ cup vegetable oil
  • 2 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 cups chopped and peeled raw apples
  • 2 tsp vanilla
Topping
  • 2 Tbsp butter
  • cup brown sugar
  • 2 Tbsp cream (or whole milk)
  • 1 Tbsp dark syrup

Method
 

  1. Preheat oven to 300˚F.
  2. Beat salad oil, eggs, and sugar until well combined.
  3. Sift together flour, baking soda, salt, and cinnamon.
  4. Add flour mixture to the wet ingredients and mix until all flour is moist.
  5. Add the apples and vanilla. Stir.
  6. Pour into a greased 9x13 inch baking dish and bake for 1 hour and 20 minutes. A darker pan may only take an hour.
Topping
  1. In a small sauce pan, bring all topping ingredients to a rolling boil.
  2. Pour onto warm cake and gently spread with a spatula.
  3. Serve with ice cream! Enjoy!
